On Wednesday CEO West students spent time at the McCormick Event Center with Matt Prescott, entrepreneur in the hospitality industry. He discussed the history of The Candlelight; his parents work ethic, Chicken George, Jan sauce, etc. and the effort and work of Larry McCormick to bring the Event Center and The Industrial to fruition. Matt's priorities became very clear: take care of family, the team (employees), community/customers. And yourself! Students were challenged to figure out what percent of a dollar was left after bills were paid in the restaurant industry. "Paying bills" with a dollars worth of pennies was a great way to visualize what percent went to each line of a P & L. The day finished with a behind the scenes tour of the kitchen and The Industrial.
